May is the month to plant sweet sorghum in the Carolinas.
Sorghum is versatile grain that can be used for making sorghum flour or in the case of sweet sorghum , a very rich tasty syrup. My family has been making sorghum syrup for as long as I can remember. We cut the cane in September when the juice is sweet and tangy. It is important to cook the juice immediately to get a premium syrup.
Really good sorghum syrup is golden brown with a hint of red, not like the almost black stuff you sometimes see in in stores.
Excellent sorghum syrup is sweet and tangy with a lovely caramel taste at the end.
